Zambrero names Daryl McCormack as new CEO to lead global expansion

After over a decade with the brand, McCormack steps into the top role to steer Zambrero’s next phase of global growth.
Mexican restaurant chain Zambrero has appointed Daryl McCormack as its new CEO, marking a leadership transition that draws from within the company’s long-serving ranks.
McCormack, who has been associated with Zambrero for over 13 years, most recently served as the development agent for Victoria and a multi-unit franchise partner. His appointment comes as the business looks to expand its footprint beyond Australia, targeting 400 restaurants by early 2026 and 500 in the longer term.
Before joining Zambrero, McCormack’s career spanned finance and franchising. He began at KPMG and later became CFO at private investment firm Gandel Group. He also held leadership positions at Blockbuster and Video Ezy across Australia and New Zealand, overseeing large-scale retail networks during their peak years.
Zambrero founder Dr Sam Prince said McCormack’s mix of corporate and franchise experience made him uniquely suited for the CEO role. “The skill set required to not only deliver results but to carry real weight when advising franchise partners and to truly embody the vision and mission of Zambrero is rare,” Prince said. “In Daryl McCormack, we have found that person. His experience leading Video Ezy and Blockbuster brings proven commercial acumen, while his time as a franchisee gives him credibility with both our customers and partners.”

Zambrero currently operates 339 restaurants across Australia, New Zealand, Ireland, the UK, and the US, and continues to grow its presence through its franchise-based model and humanitarian mission — serving “Mexican with a mission” by supporting global hunger relief initiatives.
